Single Thread, which opened December in Healdsburg, California, is heralded as the Golden State’s answer to ryokan – Japanese traditional inns that offer elaborate meals and comfortable lodgings. Single Thread is the embodiment of a dream shared by chef Kyle Connaughton, formerly of The Fat Duck, and his wife, Katina, to bring omotenashi, the Japanese art of selfless hospitality, to Sonoma wine country. There are no hot springs, tatami mats or kaiseki sets, but there is a well-thought-out 11-course meal, a spread of hot and cold dishes made with ingredients grown on Single Thread’s farm nearby.
