Elite Concepts has brought Jiang Zhujun, the esteemed chef de cuisine of yè shanghai (Shanghai), to its Tsim Sha Tsui outpost this June. Known for his refined approach to Shanghainese cuisine, chef Jiang is introducing 11 new summer dishes that mark an exciting new chapter for the restaurant, which has earned a remarkable 19 Michelin stars to date

Moving away from heavier, richer classics, chef Jiang’s summer menu embraces a lighter and more delicate style. He focuses on balance, clarity of flavour and the natural beauty of seasonal ingredients, using precise modern techniques to let each component shine. By reducing heavy sauces and letting fresh produce take centre stage, the dishes deliver subtle acidity, gentle spice and beautifully layered tastes that feel refreshing and refined.



Standout creations include Fresh Scallops and Garlic in Spicy Sauce, where sous-vide scallops are paired with crisp Yunnan garlic for a clean, aromatic kick. Another highlight is the Salted Sichuan Pepper Brined Pigeon, featuring tender 20-day-old pigeons from Guangdong, infused with fragrant green peppercorns for a bouncy, numbing finish. The Crispy Chili Beef Shank offers a satisfying contrast of crispy exterior and tender centre, while the Crystal “Pomegranate-shaped” Dumplings with Malantou and Dried Smoked Bean Curd provide a light, chewy bite. Guests can also look forward to Sautéed Prawns in Mustard Sauce and the seasonal Stir-Fried Fox Nuts with Green Peas and Jinhua Ham.
